Beignets: African-Style Fried Dough

Ingredients

  • 4 cups all-purpose flour
  • 1 packet active dry yeast (2 1/4 tsp)
  • 1/4 cup sugar
  • 1 tsp salt
  • 1 cup warm milk
  • 2 tbsp vegetable oil
  • 1 egg, beaten
  • Oil for frying
  • 3/4 cup powdered sugar for dusting

Instructions

  1. Activate yeast in warm milk (110F). Let sit 5 minutes until foamy.
  2. Mix flour, sugar, and salt in large bowl.
  3. Add yeast mixture, oil, and egg to flour. Mix until dough forms.
  4. Knead dough 5-7 minutes until smooth and elastic.
  5. Place in oiled bowl, cover with plastic wrap. Let rise 1 hour until doubled.
  6. Punch down dough. Roll to 1/4 inch thickness on floured surface.
  7. Cut into 2-inch squares or diamonds.
  8. Heat oil to 350F (175C).
  9. Fry beignets 2-3 minutes per side until golden brown.
  10. Drain on paper towels. Immediately dust with powdered sugar.
  11. Serve warm and fresh — they are best eaten the same day!

Chef Tip

In Senegal and Mali, beignets (also called pastels) are often filled with meat or fish. Try both sweet and savory versions!
