Ingredients
- 200g dark chocolate, chopped
- 100g butter
- 3 eggs
- 3 egg yolks
- 100g sugar
- 50g flour
- Pinch of salt
- Butter and cocoa for ramekins
- Vanilla ice cream for serving
Instructions
- Preheat oven to 220C (425F). Butter 4 ramekins and dust with cocoa powder.
- Melt chocolate and butter together over a double boiler. Let cool slightly.
- In a bowl, whisk eggs, yolks, and sugar until thick and pale.
- Fold chocolate mixture into egg mixture.
- Gently fold in flour and salt until just combined.
- Divide batter among ramekins. Can refrigerate up to 24 hours at this point.
- Bake for 10-12 minutes until edges are firm but center is soft.
- Let rest 1 minute, then run a knife around edges and invert onto plates.
- Serve immediately with vanilla ice cream.
Chef Tip
The batter can be made ahead and refrigerated. Add 2-3 minutes to baking time if baking from cold.
