Classic Chocolate Lava Cake

Ingredients

  • 200g dark chocolate, chopped
  • 100g butter
  • 3 eggs
  • 3 egg yolks
  • 100g sugar
  • 50g flour
  • Pinch of salt
  • Butter and cocoa for ramekins
  • Vanilla ice cream for serving

Instructions

  1. Preheat oven to 220C (425F). Butter 4 ramekins and dust with cocoa powder.
  2. Melt chocolate and butter together over a double boiler. Let cool slightly.
  3. In a bowl, whisk eggs, yolks, and sugar until thick and pale.
  4. Fold chocolate mixture into egg mixture.
  5. Gently fold in flour and salt until just combined.
  6. Divide batter among ramekins. Can refrigerate up to 24 hours at this point.
  7. Bake for 10-12 minutes until edges are firm but center is soft.
  8. Let rest 1 minute, then run a knife around edges and invert onto plates.
  9. Serve immediately with vanilla ice cream.

Chef Tip

The batter can be made ahead and refrigerated. Add 2-3 minutes to baking time if baking from cold.
