Directions
- In a medium bowl, whisk together the buttermilk, egg, hot sauce, salt, and pepper until smooth and fully combined.
- Add the sliced okra to the buttermilk mixture, tossing gently to coat every piece. Let it soak at room temperature for 15 minutes while you prepare the dredge.
- In a wide shallow bowl, stir together the cornmeal, flour, smoked paprika, garlic powder, onion powder, cayenne, and salt until evenly blended.
- Heat the oil in a heavy 10-inch cast-iron skillet over medium-high heat until it reaches 350°F on a deep-fry thermometer.
- Working in small batches, lift a handful of okra from the buttermilk, let the excess drip off, and toss in the cornmeal mixture until thickly coated. Press gently so the dredge adheres.
- Carefully lower the coated okra into the hot oil without crowding the pan. Fry for 3 to 4 minutes, turning occasionally, until deep golden brown and crisp on all sides.
- Use a slotted spoon to transfer the fried okra to a paper towel–lined plate and immediately sprinkle with flaky sea salt. Repeat with the remaining okra, keeping finished batches warm in a 200°F oven.
