- 1/2 cup (120 ml) whole milk
- 2 tbsp extra-virgin olive oil
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp chopped fresh flat-leaf parsley
- 1 pinch ground nutmeg, plus salt and black pepper to taste
Directions
- Make the pastry: In a large bowl, whisk the flour and salt. Cut in the cold butter with your fingertips until the mixture looks like coarse crumbs, then stir in the egg yolk and just enough ice water to bring the dough together.
- Shape the dough into a disc, wrap in plastic, and chill for 30 minutes while you prepare the filling.
- Warm the olive oil in a small skillet over medium heat. Cook the onion until soft and translucent, about 5 minutes, then add the garlic and cook 1 minute more. Remove from the heat and let cool slightly.
- In a mixing bowl, whisk the eggs with the milk, nutmeg, salt, and pepper. Stir in the grated Mahón cheese, the sautéed onion mixture, and the parsley.
- Preheat the oven to 375°F (190°C) and lightly butter six 4-inch (10 cm) tartlet pans or muffin cups.
- On a lightly floured surface, roll the pastry to about 1/8-inch (3 mm) thickness. Cut rounds slightly larger than your pans and press them in, trimming the edges flush.
- Divide the filling evenly among the pastry shells, filling each about three-quarters full.
- Bake for 20 to 22 minutes, until the crust is deep golden and the filling is just set with a slight puff in the center.
- Let the pies rest in their pans for 5 minutes, then unmold and serve warm or at room temperature.

- Aged Mahón-Menorca is the authentic choice; if unavailable, mix equal parts aged Manchego and mild young provolone for a similar salty, buttery character.
