Ingredients
For the rose milk syrup
- 1.5 L whole milk
- 300 g granulated sugar
- 2 tbsp cornstarch
- 3 tbsp rose water
- 1 tsp vanilla extract
For the layers
- 12 thin güllaç sheets (or very thin phyllo)
- 1 cup shelled pistachios, roughly chopped
- 1/2 cup walnuts, finely chopped
- 1/2 cup pomegranate seeds
For the garnish
- 2 tbsp chopped pistachios
- 2 tbsp pomegranate seeds
- 1 tsp dried rose petals (optional)
- 1/4 tsp ground cinnamon
Directions
- In a large saucepan, whisk together the milk, sugar, and cornstarch until completely smooth. Heat over medium, stirring constantly, until the sugar dissolves and the mixture just begins to thicken, about 8 to 10 minutes; do not allow it to boil.
- Remove the pan from heat and stir in the rose water and vanilla extract. Let cool for 5 minutes so the milk is warm but not hot, which would make the sheets fall apart.
- Pour a thin layer of the rose milk into a 9×13-inch (23×33 cm) rectangular baking dish to coat the bottom. Lay one pastry sheet in the dish, gently folding it to fit, and spoon about 1/3 cup of milk evenly over the surface until fully saturated.
- Repeat with 6 more sheets, brushing each with milk as you go and rotating sheets so they cover the dish evenly.
- Sprinkle half of the pistachios, walnuts, and pomegranate seeds evenly over the top of the layered sheets.
- Layer the remaining 6 sheets, brushing each with milk as before. Pour any remaining milk over the top and press gently with the back of a spoon to release air bubbles and ensure even soaking.
- Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the pastry is completely cool and the sheets have softened into a custard-like texture.
- Cut into diamond or square pieces, then garnish with the remaining chopped pistachios, pomegranate seeds, dried rose petals, and a light dusting of cinnamon. Serve cold.
Cook’s Notes
- Whole milk is essential here; lower-fat milk will leave the dessert thin and watery.
- Güllaç sheets are sold at Turkish and Middle Eastern markets; if substituting phyllo, use 2 layers per sheet for sturdiness.
- Always let the milk cool slightly before pouring; hot liquid will dissolve the delicate sheets into mush.
- Make it the night before for the cleanest cuts and the most developed rose flavor.
- Adjust rose water gradually; 3 tablespoons is gently floral, but you can add a fourth for a more pronounced aroma.
