A hallmark of Thrace's street-food culture, Tekirdağ köfte are hand-shaped into distinctive ovals and grilled over charcoal until smoky and juicy. They're traditionally served with blistered tomatoes, charred green peppers, raw onion tossed in sumac, and flatbread.

Ingredients

For the köfte

  • 500 g (1.1 lb) ground beef with about 15% fat, or half beef / half lamb
  • 1 small stale white bread roll (about 40 g), crust removed and soaked in cold water
  • 1 small onion, finely grated and squeezed very dry
  • 3 garlic cloves, crushed to a paste
  • 1 large egg
  • 1 tsp ground cumin
  • 1 tsp sweet paprika
  • 1 tsp fine sea salt
  • ½ tsp freshly ground black pepper
  • 2 tbsp finely chopped flat-leaf parsley

For serving

  • 2 ripe tomatoes, halved
  • 2 long green Turkish peppers (sivri biber)
  • 1 medium red onion, thinly sliced
  • ½ tsp ground sumac
  • 1 tbsp olive oil
  • Lemon wedges, for serving

Directions

  1. Squeeze the soaked bread hard to remove excess water, then crumble it into a large bowl. Add the grated onion, garlic, egg, cumin, paprika, salt, pepper, parsley, and ground meat.
  2. Knead the mixture firmly for 5–7 minutes until it becomes smooth, sticky, and uniform — this long kneading is what gives Tekirdağ köfte their characteristic springy, almost sausage-like texture.
  3. Cover the bowl and chill for at least 15 minutes (or up to 1 hour) so the flavors meld and the mixture firms up for easier shaping.
  4. Divide the mixture into 8 equal portions. With wet hands, shape each portion into a smooth oval about 8 cm long and 4 cm wide, tapering gently at the ends. Arrange on a lightly oiled tray.
  5. Prepare a charcoal grill for medium-high heat (about 200–220°C / 400–425°F). Grill the köfte for 7–9 minutes total, turning often, until well-charred outside and just cooked through inside.
  6. In the last 3 minutes of grilling, add the halved tomatoes and whole green peppers to the grate, turning until the skins are blistered and softened.
  7. While the meat cooks, toss the sliced red onion with the sumac, olive oil, and a small pinch of salt in a small bowl and set aside.
  8. Serve the hot köfte on a wooden board with the grilled tomatoes and peppers, the sumac onion salad, lemon wedges, and warm flatbread on the side.

Cook’s Notes

  • Don't skip the long kneading — it's the secret to the bouncy, springy interior that distinguishes Tekirdağ köfte from other Turkish meatballs.
  • Always wet your hands before shaping so the surface stays smooth and the oval keeps its clean tapered ends.
  • If you don't have charcoal, a heavy cast-iron grill pan over high heat works; preheat it thoroughly for a good sear.
  • For a more traditional flavor, finely mince a tablespoon of tail fat (kuyruk yağı) into the meat mixture.
  • Leftover köfte are excellent the next day in a flatbread sandwich with the sumac onion and a smear of butter.
