Ingredients
For the dough
- 300 g all-purpose flour
- 60 g fine semolina
- 1 tsp baking powder
- 1/2 tsp baking soda

- 80 ml fresh orange juice
- zest of 1 orange
- 80 ml light olive oil
- 50 g unsalted butter, melted
- 2 tbsp brandy (optional)
- 60 g finely ground walnuts
- 1 egg yolk
For the honey syrup
- 250 g honey
- 150 ml water
- 80 g granulated sugar
- 1 cinnamon stick
- 2 whole cloves
- strip of lemon peel
For finishing
- 150 g walnuts, finely chopped
- 1 tsp ground cinnamon
- 2 tbsp warm honey, for drizzling
Directions
- Preheat the oven to 180°C (350°F) and line two baking sheets with parchment paper. Whisk the flour, semolina, baking powder, baking soda, cinnamon, clove, and mahlepi in a large bowl to combine.
- In a separate bowl, whisk the sugar, orange juice, orange zest, olive oil, melted butter, brandy, egg yolk, and ground walnuts until smooth. Pour the wet mixture into the dry and stir gently until a soft, slightly sticky dough forms; do not overwork.
- Pinch off tablespoon-sized portions of dough and roll between your palms into small ovals about 5 cm long. Press the top of each oval lightly with a fork to create a ridged pattern, then arrange on the prepared sheets spacing them 3 cm apart.
- Bake for 18–22 minutes, until the cookies are just lightly golden on the bottom but still pale on top — they should remain soft as they will absorb syrup later. While they bake, make the syrup: combine honey, water, sugar, cinnamon stick, cloves, and lemon peel in a wide saucepan, bring to a gentle simmer, and cook 5 minutes until slightly thickened.
- As soon as the cookies leave the oven, use a slotted spoon to transfer them one by one into the warm honey syrup, letting each soak for 20–30 seconds before turning it over for another 20 seconds. Lift them out and arrange on a wire rack set over a tray to catch drips.
- Mix the chopped walnuts with the cinnamon in a small bowl. While the cookies are still tacky and warm, press the tops firmly into the walnut mixture so a generous layer adheres. Drizzle each cookie with a thin line of warm honey and let them cool completely.
- Store the cookies in a single layer in an airtight container at room temperature for up to 2 weeks; the flavor deepens beautifully after a day or two. They are traditionally served with coffee, tea, or a glass of cold sweet wine.
Cook’s Notes
- Mahlepi (ground cherry pit) is a hallmark Greek spice that gives these cookies their subtle floral note; if unavailable, a pinch of nutmeg plus extra cinnamon is a fair substitute.
- Do not bake the cookies until deeply browned — they will darken further as they absorb the syrup and become overly sweet.
