- 1/2 cup full-fat sour cream
- 2 tbsp raspberry or apricot jam
For the jam glaze
- 3 tbsp apricot or raspberry jam, warmed
- 1 tbsp hot water
- 1 tsp fresh lemon juice
Directions
- Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line the long sides with parchment, leaving overhangs for easy lifting.
- In a medium bowl, whisk together the all-purpose flour, rye flour, baking soda, cinnamon, ginger, cloves, and salt until evenly blended.
- In a small saucepan over low heat, melt the butter with the honey and brown sugar, stirring just until smooth and warm (do not let it boil). Pour into a large mixing bowl and let cool 5 minutes.
- Whisk the eggs into the cooled honey mixture one at a time, then stir in the sour cream and jam until completely smooth.
- Add the dry ingredients to the wet in three additions, folding gently with a spatula just until no streaks of flour remain; the batter will be thick and glossy.
- Scrape the batter into the prepared loaf pan, smooth the top, and tap the pan once on the counter to release any air bubbles.
- Bake on the middle rack for 45 to 55 minutes, until a wooden skewer inserted in the center comes out with just a few moist crumbs. Tent loosely with foil at the 35-minute mark if the top is browning too quickly.
- Cool the cake in the pan for 15 minutes, then lift it out using the parchment and transfer to a wire rack. Whisk the jam glaze ingredients together and brush generously over the warm cake; cool completely before slicing.
Cook’s Notes
- Buckwheat honey gives kovryzha its traditional deep, almost molasses-like flavor, but any strong dark honey works well.
- Do not overmix once the flour is added; a few small lumps are fine and keep the cake tender.
- Wrapped in foil at room temperature, the cake keeps 4 to 5 days and the spice flavor deepens noticeably by day two.
- For a sweeter finish, dust the cooled cake with powdered sugar before slicing, or skip the glaze and serve with whipped sour cream.
- Bake in a loaf pan for the classic shape, or use an 8-inch round cake pan and reduce the bake time to about 35 minutes.
