Directions
- Preheat a dry skillet over medium-low heat. Add the almonds and toast, stirring frequently, for 6 to 8 minutes until they are deeply golden and fragrant, taking care not to scorch them.
- Transfer the toasted almonds to a plate and let them cool for 5 minutes until just warm; this short rest brings out their sweetness without overcooking.
- Add the cooled almonds to a food processor and pulse 10 to 12 times until they break down into a coarse, sandy meal.
- With the processor running, slowly drizzle in the argan oil (and olive oil, if using) and continue blending for 1 to 2 minutes until the mixture forms a thick, glossy paste.
- Add the honey and salt, then blend for another 30 seconds until the dip is smooth but still has a hint of texture; scrape down the sides as needed.
- Taste and adjust with a touch more honey for sweetness or a pinch of salt to round out the flavors.
- Spoon the dip into a shallow bowl, make a small well in the center, and drizzle with extra honey and a thread of argan oil. Scatter the toasted sesame seeds over the top, if using.
- Serve warm or at room temperature with torn Moroccan flatbread, msemen, or toasted baguette for dipping.
