Ingredients
- 400g penne or rigatoni pasta
- 2 cups heavy cream
- 1 cup sun-dried tomatoes
- 2 cups fresh spinach
- 4 cloves garlic, minced
- 1/2 cup parmesan cheese, grated
- 2 tbsp butter
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Cook pasta according to package directions. Reserve 1 cup pasta water.
- In a large pan, melt butter over medium heat. Sauté garlic for 1 minute.
- Add heavy cream and bring to a simmer. Cook for 3-4 minutes.
- Stir in parmesan cheese until melted and smooth.
- Add sun-dried tomatoes and spinach. Cook until spinach wilts.
- Toss in cooked pasta. Add pasta water if needed for consistency.
- Season with salt and pepper. Garnish with fresh basil.
