Creamy Tuscan Pasta

Ingredients

  • 400g penne or rigatoni pasta
  • 2 cups heavy cream
  • 1 cup sun-dried tomatoes
  • 2 cups fresh spinach
  • 4 cloves garlic, minced
  • 1/2 cup parmesan cheese, grated
  • 2 tbsp butter
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook pasta according to package directions. Reserve 1 cup pasta water.
  2. In a large pan, melt butter over medium heat. Sauté garlic for 1 minute.
  3. Add heavy cream and bring to a simmer. Cook for 3-4 minutes.
  4. Stir in parmesan cheese until melted and smooth.
  5. Add sun-dried tomatoes and spinach. Cook until spinach wilts.
  6. Toss in cooked pasta. Add pasta water if needed for consistency.
  7. Season with salt and pepper. Garnish with fresh basil.
