Ingredients
- 2 cups sushi rice
- 2.5 cups water
- 1/4 cup rice vinegar
- 2 tbsp sugar
- 1 tsp salt
- 4 nori seaweed sheets
- 200g fresh salmon or tuna
- 1 cucumber, julienned
- 1 avocado, sliced
- Soy sauce, wasabi, pickled ginger for serving
Instructions
- Wash rice until water runs clear. Cook with water in rice cooker.
- Mix rice vinegar, sugar, and salt. Warm slightly to dissolve.
- Fold vinegar mixture into hot rice. Fan while folding to cool.
- Place nori sheet shiny side down on bamboo mat.
- Spread thin layer of rice on nori, leaving 1 inch at top.
- Add fish, cucumber, and avocado in a line across center.
- Roll tightly using bamboo mat. Wet the top edge to seal.
- Slice into 6-8 pieces with wet knife. Serve with soy sauce.
