A beloved Cameroonian street-food classic, tender beef cubes are marinated in a punchy soy-garlic sauce with ginger and Maggi seasoning, then threaded onto skewers with onion and bell pepper and charred over high heat. Served with sliced raw onion, tomato, and a squeeze of lemon, it's the kind of smoky, salty, savory snack eaten straight off the grill.

Ingredients
For the marinade
- 1/2 cup soy sauce
- 3 tablespoons vegetable oil
- 2 tablespoons white vinegar or lemon juice
- 5 garlic cloves, finely minced
- 1 tablespoon fresh ginger, grated
- 1 Maggi cube, crushed
- 1 teaspoon freshly ground black pepper
- 1/2 teaspoon cayenne pepper
For the skewers
- 1.5 lb (680 g) beef sirloin or flank steak, cut into 1-inch cubes
- 1 large red onion, cut into 1-inch chunks
- 1 green bell pepper, cut into 1-inch chunks
- 1 red bell pepper, cut into 1-inch chunks
- 2 tablespoons vegetable oil, for brushing
For serving
- 1 small red onion, thinly sliced
- 1 tomato, sliced
- 1 fresh hot chili, sliced (optional)
- Lemon wedges
- Crusty baguette or fried plantains, to accompany
Directions
- In a large bowl, whisk together the soy sauce, vegetable oil, vinegar, garlic, ginger, crushed Maggi cube, black pepper, and cayenne until well combined.
- Add the beef cubes to the marinade, toss to coat thoroughly, cover, and refrigerate for at least 30 minutes (or up to 4 hours) so the flavors penetrate the meat.
- If using bamboo or wooden skewers, soak them in water for 20 minutes to prevent burning. Preheat a grill or grill pan over medium-high heat until very hot, about 400°F (200°C).
- Thread the marinated beef onto the skewers, alternating with chunks of red onion and bell pepper, leaving a little space between each piece for even cooking.
- Lightly brush the assembled skewers with vegetable oil and place them on the hot grill. Cook for 2-3 minutes per side, turning frequently, until the beef is nicely charred on the outside and cooked to your desired doneness (about 8-10 minutes total for medium).
- Transfer the skewers to a platter, tent loosely with foil, and let them rest for 3-4 minutes so the juices redistribute through the meat.
- Arrange the sliced raw onion, tomato, and chili on a serving plate with lemon wedges on the side.
- Serve the skewers hot, squeezing fresh lemon over them just before eating, alongside crusty baguette or fried plantains for an authentic Cameroonian street-food experience.
Cook’s Notes
- Choose a tender cut like sirloin, flank, or tenderloin; tougher cuts become chewy after only a short marinade time.
- Do not marinate longer than 4 hours because the vinegar and soy will start to cure the surface and toughen the meat texture.
- For the most authentic flavor, use African-style Maggi cubes rather than bouillon powder; they add the signature umami depth Cameroonian cooks love.
- Get the grill properly ripping hot before adding the skewers so the beef sears quickly and stays juicy inside rather than slowly drying out.
- If a grill isn't available, a cast-iron grill pan on high heat gives excellent char marks and works beautifully in a kitchen setting.
