Ingredients
- 2 cups long-grain rice
- 400g fresh tomatoes, blended
- 3 red bell peppers, blended
- 2 onions (1 sliced, 1 chopped)
- 3 tbsp tomato paste
- 2 cups chicken or beef stock
- 1 tsp curry powder
- 1 tsp thyme
- 2 bay leaves
- Salt to taste
- Vegetable oil
Instructions
- Wash rice thoroughly and set aside.
- Heat oil in a large pot. Fry one sliced onion until golden.
- Add tomato paste and fry for 3-4 minutes until darkened.
- Add blended tomato and pepper mixture. Cook on medium for 20 minutes, stirring occasionally.
- Add curry, thyme, bay leaves, and stock. Bring to a boil.
- Add washed rice, stir well. Season with salt.
- Cover tightly and cook on low heat for 30-35 minutes until rice is tender and fully cooked.
- Fluff with a fork and serve with fried plantains and salad.
