Ingredients
For the bread base
- 4 small crusty white bread rolls (about 10 cm / 4 in)
- 30 g (2 tbsp) butter, softened
For the chips
- 400 g (2 medium) potatoes, peeled
- 15 ml (1 tbsp) all-purpose flour
- 500 ml sunflower oil, for deep-frying
- Fine salt, to season
For the filling
- 150 g polony or Russian sausage, thinly sliced
- 100 g Vienna sausages, sliced
- 4 large eggs
- 1 small onion, thinly sliced
- 4 slices cheddar or processed cheese
For the sauces and toppings
- 60 ml (4 tbsp) tomato ketchup
- 60 ml (4 tbsp) mayonnaise
- 60 g (4 tbsp) mango atchar
- 1 ripe tomato, sliced
- 4 crisp lettuce leaves
- Salt and black pepper, to taste
Directions
- Peel the potatoes and cut into 1 cm chips. Soak in cold water for 15 minutes, then drain and pat completely dry with a tea towel. Toss with the flour.
- Heat the oil in a deep pot to 170°C and fry the chips in small batches for 4-5 minutes until golden and crisp. Drain on paper towels and season generously with salt.
- Slice each bread roll three-quarters of the way through horizontally, keeping a hinge. Scoop out the soft interior crumb to form a generous pocket, then spread the inside lightly with softened butter.
- Heat a heavy pan over medium-high. Add the polony, Vienna sausages, and onion; fry for 3-4 minutes until the meats are caramelized at the edges and the onion is golden. Transfer to a plate.
- In the same pan, fry the eggs sunny-side up until the whites are set but the yolks stay runny; season with salt and pepper.
- Build each mini kota by lining the bottom of the hollowed roll with a handful of hot chips, then layer with polony, Vienna sausage, and fried onions.
- Tuck a cheese slice into the filling so it begins to soften, then add a fried egg, tomato slices, and a lettuce leaf. Spoon a generous tablespoon of mango atchar on top.
- Drizzle with ketchup and mayonnaise, press the lid down firmly, wrap in parchment paper, and serve immediately while the chips are still crisp.
Cook’s Notes
- Use day-old crusty rolls so they hollow cleanly without crumbling or going soggy.
- Pat the chips bone-dry before frying so they stay crisp inside the bread.
- Always assemble right before eating to keep the bread from softening.
- Swap polony for Russian sausage, bacon, grilled steak, or even slap-chips for variety.
- Add a few drops of peri-peri or hot sauce for a spicy kick the way locals order it.
