Ingredients

For the buttermilk soak

  • 1 cup full-fat buttermilk
  • 1 large egg

  • 1 1/2 cups peanut or vegetable oil, for frying
  • Flaky sea salt, for finishing

Directions

  1. In a medium bowl, whisk together the buttermilk, egg, hot sauce, salt, and pepper until smooth and fully combined.
  2. Add the sliced okra to the buttermilk mixture, tossing gently to coat every piece. Let it soak at room temperature for 15 minutes while you prepare the dredge.
  3. In a wide shallow bowl, stir together the cornmeal, flour, smoked paprika, garlic powder, onion powder, cayenne, and salt until evenly blended.
  4. Heat the oil in a heavy 10-inch cast-iron skillet over medium-high heat until it reaches 350°F on a deep-fry thermometer.
  5. Working in small batches, lift a handful of okra from the buttermilk, let the excess drip off, and toss in the cornmeal mixture until thickly coated. Press gently so the dredge adheres.
  6. Carefully lower the coated okra into the hot oil without crowding the pan. Fry for 3 to 4 minutes, turning occasionally, until deep golden brown and crisp on all sides.
  7. Use a slotted spoon to transfer the fried okra to a paper towel–lined plate and immediately sprinkle with flaky sea salt. Repeat with the remaining okra, keeping finished batches warm in a 200°F oven.
  8. Serve the okra straight away while the crust is still audibly crunchy, with a side of remoulade or a squeeze of lemon if you like.
  9. Store any leftovers in a single layer in the refrigerator and reheat in a 375°F oven or air fryer for 5 to 7 minutes to restore crispness.
