Ingredients
For the pork chops
- 4 bone-in pork chops, about 1 inch thick (8–10 oz each)
- 1 tbsp seasoned salt (such as Lawry's)
- 1 tsp freshly ground black pepper
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 2 tbsp vegetable oil
For the onion gravy
- 4 tbsp unsalted butter
- 2 large yellow onions, halved and thinly sliced
- 3 tbsp all-purpose flour
- 2 cups low-sodium chicken broth
- 1 tbsp Worcestershire sauce
- 1 tsp dried thyme
- 1 bay leaf
- Salt and black pepper, to taste
Directions
- Pat the pork chops dry and season both sides generously with the seasoned salt, black pepper, garlic powder, and smoked paprika. Let stand at room temperature for 10–15 minutes to take the chill off.
- Heat the vegetable oil in a large cast iron or heavy-bottomed skillet over medium-high heat until shimmering. Sear the chops for 3–4 minutes per side until a deep golden crust forms. Transfer to a plate and set aside.
- Reduce the heat to medium. Add the butter to the same skillet, then scatter in the sliced onions. Cook, stirring occasionally, for 10–12 minutes until the onions are soft, golden, and lightly caramelized.
- Sprinkle the flour over the onions and stir constantly for 1–2 minutes to cook out the raw flour taste and form a light roux.
- Slowly pour in the chicken broth while whisking and scraping up all the browned bits from the bottom of the pan. Stir in the Worcestershire sauce, thyme, and bay leaf. Bring the gravy to a gentle simmer.
- Return the pork chops and any accumulated juices to the skillet, nestling them into the gravy so they are mostly submerged. Reduce the heat to low, cover, and simmer gently for 25–30 minutes until the chops are fork-tender and reach an internal temperature of 145°F.
- Discard the bay leaf and taste the gravy, adjusting with salt and pepper. If the gravy is thinner than you like, simmer uncovered for a few minutes; if too thick, loosen with a splash of broth.
- Serve the chops hot in shallow bowls, spooning the onion gravy generously over the top alongside mashed potatoes, rice, or buttermilk biscuits.
