Ingredients

For the puff pastry layers

  • 1 sheet (about 400 g) all-butter puff pastry, thawed if frozen
  • 2 tbsp granulated sugar
  • 1 tbsp unsalted butter, melted

For the vanilla pastry cream

  • 500 ml whole milk
  • 1 vanilla bean, split and scraped (or 2 tsp pure vanilla extract)
  • 6 large egg yolks
  • 100 g granulated sugar
  • 40 g cornstarch
  • 30 g unsalted butter, cubed
  • Pinch of fine sea salt

For the icing and finishing

  • 200 g powdered sugar, sifted
  • 2 to 3 tbsp whole milk
  • 1 tsp fresh lemon juice
  • 50 g dark chocolate (70%), melted

Directions

  1. Preheat the oven to 200°C (400°F) and line a large baking sheet with parchment paper. On a lightly floured surface, roll the puff pastry into a 30 x 40 cm rectangle about 3 mm thick, then transfer to the prepared sheet.
  2. Dock the pastry all over with a fork to prevent excessive puffing, brush lightly with melted butter, and sprinkle evenly with the granulated sugar. Place another sheet of parchment and a second baking sheet on top to weigh it down. Bake for 20 to 25 minutes, removing the top sheet halfway through, until the pastry is deep golden, crisp, and caramelized. Transfer to a wire rack and cool completely.
  3. Meanwhile, make the pastry cream: heat the milk with the scraped vanilla seeds (or extract) in a saucepan over medium heat until just steaming. In a bowl, whisk the egg yolks, sugar, cornstarch, and salt until pale and thick. Slowly pour the hot milk into the yolks while whisking constantly, then return the mixture to the saucepan.
  4. Cook the custard over medium heat, whisking constantly, until it thickens and bubbles for 2 minutes. Remove from heat, stir in the butter until smooth, and press plastic wrap directly onto the surface. Chill for at least 2 hours, or until completely cold.
  5. Cut the cooled puff pastry into 12 equal rectangles, about 10 x 7 cm each. Whisk the chilled pastry cream briefly to loosen it. Pipe or spoon a generous layer of cream onto a pastry rectangle, top with a second rectangle, add more cream, and cap with a third rectangle, pressing gently to level.
  6. Make the icing by whisking the powdered sugar with the milk and lemon juice until smooth and thick but spreadable. Spread a thin, even layer over the top of each assembled mille feuille, letting it drip slightly over the edges.
  7. Melt the chocolate and transfer to a small paper cone or zip-top bag with the corner snipped. Pipe thin parallel chocolate lines across the icing, then drag a toothpick across the lines in the opposite direction to create the classic feathered hatched pattern. Chill for 15 minutes to set before serving.
