Ingredients

For the Ice

  • 8 cups crushed ice or 1 large block of clear ice
  • 2 tablespoons cold water (if using crushed ice, for smoother shave)

For the Rainbow Syrups

  • 1/4 cup strawberry syrup
  • 1/4 cup lemon-lime or pineapple syrup (yellow)
  • 1/4 cup blue raspberry or tropical blue syrup
  • 2 teaspoons vanilla syrup (optional base layer)

For the Toppings

  • 4 small scoops vanilla ice cream or 1 cup sweetened azuki beans
  • 1/3 cup sweetened condensed milk
  • 1/4 cup mochi balls (optional)
  • 1 teaspoon li hing mui powder, for dusting (optional)

Directions

  1. If using a shave ice machine, shave a block of clear ice into a large bowl to catch the fine snow-like flakes. If using a home blender, pulse ice cubes in small batches with a splash of cold water until fluffy and snow-like.
  2. Scoop the shaved ice into 4 tall paper cones, bowls, or cups, packing it gently and mounding it 2 to 3 inches above the rim for a dramatic presentation.
  3. If using azuki beans, spoon them into the bottom of each cup now. Nestle a small scoop of vanilla ice cream into the center of each ice mound, pressing it down slightly.
  4. Drizzle the vanilla syrup (if using) over the ice first as a base layer, allowing it to soak through the flakes.
  5. Pour the strawberry syrup over one side of each mound, the yellow lemon-lime syrup over the opposite side, and the blue raspberry syrup down the center to create the signature rainbow stripe effect.
  6. Drizzle 1 to 2 tablespoons of sweetened condensed milk slowly over the top of each shave ice, letting it cascade down the sides and pool at the base.
  7. Top with mochi balls if using, dust with li hing mui powder for an authentic salty-sweet finish, and serve immediately with a long spoon and a fat straw so you can reach the syrup-soaked bottom.

Cook’s Notes

  • A real shave ice machine produces much finer, drier flakes than a blender; for best texture freeze water in a large loaf pan and shave directly from the block.
