Ingredients

- 1/4 tsp ground cinnamon
- 1 1/2 tsp sea salt
- 1/2 tsp freshly ground black pepper
- 2 tbsp ice water
For wrapping and grilling
- 1 lb (450 g) fresh pork caul fat (crepine), rinsed and patted dry
- Olive oil, for brushing
- Lemon wedges, for serving

For the herb oil (optional)
- 1/3 cup extra-virgin olive oil
- 1 tbsp fresh oregano leaves
- 1 small garlic clove, grated
- Pinch of salt and a squeeze of lemon juice
Directions
- Combine the minced pork, grated onion, garlic, parsley, marjoram, cumin, cinnamon, salt, pepper, and ice water in a large bowl. Mix with your hands for 2-3 minutes until the mixture feels tacky and holds together when pressed, then cover and chill for 30 minutes to let the flavors meld.
- Lay the caul fat flat on a clean work surface in a single layer, snipping any thick sections open so it lies evenly. Cut it into rough 6-inch squares (about 15 cm). Place a heaping tablespoon of the pork mixture in the center of each square.
- Gather the edges of the caul fat up around the meat and twist firmly to form a tight ball or short sausage, then flatten it slightly into a patty about 3 inches across. The caul fat should fully encase the meat with no gaps. Set the shaped sausages on a tray lined with parchment.
- Whisk the olive oil, oregano, grated garlic, salt, and lemon juice together in a small bowl for the herb oil; set aside until serving.
- Prepare a charcoal grill for medium-high heat (you want a hot fire with a thin layer of white ash). Lightly brush the grates with oil. Grill the sheftalia for 5-7 minutes per side, turning carefully, until the caul fat is deeply golden and crisp and the pork reads 160°F (71°C) on an instant-read thermometer.
- Let the sausages rest for 3 minutes so the juices settle, then serve hot in warm pita with lemon wedges and the herb oil spooned over the top.
Cook’s Notes
- If caul fat is unavailable, you can substitute thin slices of pork belly or a very fine lamb netting, but the texture will be different; chase down caul fat from a butcher or specialty meat market for the authentic result.
- Do not skip chilling the seasoned meat – it helps the mixture bind so the sausages hold their shape on the grill.
- Twist the caul fat very tightly around the meat; any loose spots will unravel and let the pork fall into the coals.
- A charcoal grill gives the most authentic smoky flavor, but a cast-iron grill pan over high heat works well indoors – just make sure the pan is ripping hot before the sausages go on.
