Ingredients
For the liver mixture
- 500 g fresh chicken livers, trimmed of sinew
- 3 large eggs
- 200 ml heavy cream
- 2 shallots, finely chopped
- 2 garlic cloves, minced
- 40 g unsalted butter
- 2 tablespoons Madeira wine (or dry brandy)
- 1 teaspoon fresh thyme leaves
- 1/2 teaspoon ground nutmeg
- 1 1/2 teaspoons fine sea salt
- 1/2 teaspoon freshly ground black pepper
For the mold and garnish
- 20 g softened butter for greasing
- 1 tablespoon fine breadcrumbs
- 1 hard-boiled egg, peeled and sliced
- 8 fresh parsley leaves
- 30 g clarified butter for sealing
Directions
- Preheat the oven to 160°C (320°F). Butter a 1-liter loaf pan or terrine mold and dust with breadcrumbs, tapping out any excess.
- Melt the 40 g of butter in a small skillet over medium heat. Sweat the shallots for 4 minutes until soft, add the garlic, and cook 1 more minute. Stir in the Madeira and thyme, then remove from heat and let cool slightly.
- Pat the chicken livers very dry with paper towels. Working in two batches, blend the livers in a food processor with the eggs, cream, sautéed shallot mixture, nutmeg, salt, and pepper until completely smooth, about 45 seconds per batch.
- Press the blended mixture through a fine-mesh sieve set over a bowl using a rubber spatula; this step gives the loaf its signature silky texture.
- Pour one-third of the liver mixture into the prepared mold. Arrange the hard-boiled egg slices in a single layer down the center, tuck in parsley leaves around them, then top with the remaining mixture and smooth the surface.
- Cover the mold tightly with a lid or aluminum foil and place it in a deep roasting pan. Pour hot water into the pan to reach halfway up the sides of the mold (bain-marie). Bake for 50 minutes, or until an instant-read thermometer inserted in the center reads 72°C (162°F).
- Remove the mold from the water bath and let cool to room temperature on a wire rack, about 1 hour. Pour the warm clarified butter evenly over the surface to form a thin sealing layer, then refrigerate for at least 6 hours, preferably overnight.
- To unmold, run a thin knife around the edges and invert onto a chilled plate. Slice with a warm, sharp knife into thick medallions and serve with toasted baguette, cornichons, and a small green salad.
