Kovryzha is a dense, aromatic Russian honey-spiced cake baked as a single loaf rather than in layers. The rye flour, dark honey, and warm spices give it an old-world flavor reminiscent of gingerbread, while a quick fruit-jam glaze keeps the top moist and tangy.

Ingredients

For the dry mixture

  • 1 cup all-purpose flour
  • 1/2 cup dark rye flour
  • 1 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1 tsp ground ginger
  • 1/2 tsp ground cloves
  • 1/4 tsp fine sea salt

For the honey batter

  • 1/2 cup (115 g) unsalted butter
  • 1/2 cup buckwheat or wildflower honey
  • 2/3 cup packed dark brown sugar
  • 2 large eggs, room temperature
  • 1/2 cup full-fat sour cream
  • 2 tbsp raspberry or apricot jam

For the jam glaze

  • 3 tbsp apricot or raspberry jam, warmed
  • 1 tbsp hot water
  • 1 tsp fresh lemon juice

Directions

  1. Preheat the oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line the long sides with parchment, leaving overhangs for easy lifting.
  2. In a medium bowl, whisk together the all-purpose flour, rye flour, baking soda, cinnamon, ginger, cloves, and salt until evenly blended.
  3. In a small saucepan over low heat, melt the butter with the honey and brown sugar, stirring just until smooth and warm (do not let it boil). Pour into a large mixing bowl and let cool 5 minutes.
  4. Whisk the eggs into the cooled honey mixture one at a time, then stir in the sour cream and jam until completely smooth.
  5. Add the dry ingredients to the wet in three additions, folding gently with a spatula just until no streaks of flour remain; the batter will be thick and glossy.
  6. Scrape the batter into the prepared loaf pan, smooth the top, and tap the pan once on the counter to release any air bubbles.
  7. Bake on the middle rack for 45 to 55 minutes, until a wooden skewer inserted in the center comes out with just a few moist crumbs. Tent loosely with foil at the 35-minute mark if the top is browning too quickly.
  8. Cool the cake in the pan for 15 minutes, then lift it out using the parchment and transfer to a wire rack. Whisk the jam glaze ingredients together and brush generously over the warm cake; cool completely before slicing.

Cook’s Notes

  • Buckwheat honey gives kovryzha its traditional deep, almost molasses-like flavor, but any strong dark honey works well.
  • Do not overmix once the flour is added; a few small lumps are fine and keep the cake tender.
  • Wrapped in foil at room temperature, the cake keeps 4 to 5 days and the spice flavor deepens noticeably by day two.
  • For a sweeter finish, dust the cooled cake with powdered sugar before slicing, or skip the glaze and serve with whipped sour cream.
  • Bake in a loaf pan for the classic shape, or use an 8-inch round cake pan and reduce the bake time to about 35 minutes.
