Ingredients

For the kidneys and broth

  • 1 lb (450 g) beef kidneys, trimmed of fat and membrane
  • 1 large onion, halved
  • 1 carrot, scrubbed
  • 2 bay leaves
  • 6 black peppercorns
  • 8 cups cold water
  • 1 tbsp white vinegar

For the soup

  • 1/2 cup pearl barley, rinsed
  • 2 medium potatoes (about 10 oz), peeled and cubed
  • 1 medium carrot, finely diced
  • 1 medium onion, finely diced
  • 4 medium pickled cucumbers, diced
  • 1 cup reserved cucumber brine
  • 2 tbsp chopped fresh dill
  • 1/4 cup chopped fresh parsley
  • Salt and freshly ground black pepper, to taste
  • Sour cream, for serving

Directions

  1. Soak the trimmed kidneys in cold salted water for 1-2 hours (or in milk for 30 minutes), then drain and rinse well. Place them in a large pot with the halved onion, whole carrot, bay leaves, peppercorns, and 8 cups of cold water. Bring to a gentle boil, skim the foam, reduce heat, and simmer for 40 minutes until the kidneys are tender.
  2. Remove the kidneys and set aside to cool slightly. Strain the broth through a fine sieve, discard the aromatics, and return the clear broth to the pot. Add the rinsed pearl barley and simmer, partially covered, for 25 minutes until the barley is tender.
  3. While the barley cooks, dice the cooled kidneys into small bite-sized pieces. In a small skillet over medium heat, sauté the diced onion and carrot in 1 tablespoon of oil for 5-6 minutes until softened and lightly golden.
  4. Add the cubed potatoes and sautéed vegetables to the pot and simmer for 10 minutes until the potatoes are just tender. Stir in the diced kidneys and pickled cucumbers, then pour in the reserved cucumber brine.
  5. Season the soup with salt and pepper, simmer for another 3-4 minutes to meld the flavors, then taste and adjust brine or salt as needed. Stir in the fresh dill and parsley just before serving. Ladle into bowls and serve hot with a generous dollop of sour cream on the side.

Cook’s Notes

  • Always soak kidneys in salted water or milk and rinse well to remove the strong, off-putting odor characteristic of offal.
  • Add the pickled cucumbers and brine only in the last 5-10 minutes of cooking so they retain their bright tangy flavor and crisp texture.
  • Pearl barley can be pre-soaked for 30 minutes to reduce cooking time and ensure a softer texture.
  • For a richer broth, substitute the water with a mild beef stock, but keep the cucumber brine for the signature sour-salty character.
  • Leftovers taste even better the next day as the flavors continue to meld; add a splash of water when reheating to thin the broth.
