Ingredients

  • 3/4 cup (130 g) stewed prunes, halved
  • 1 tablespoon honey, for drizzling
  • Fresh berries, for garnish (optional)

Directions

  1. Preheat the oven to 250°F (120°C). Line a baking sheet with parchment and draw an 8-inch circle on the paper as a guide, then flip the parchment over.
  2. In a clean, grease-free bowl, beat the egg whites and salt with an electric mixer on medium speed until foamy and soft peaks form, about 1 minute.
  3. Gradually add the superfine sugar, one tablespoon at a time, beating on high between additions until the meringue is glossy and holds stiff, peaked whites, about 5 minutes total.
  4. Warm the honey just until it flows easily, then drizzle it into the meringue while beating on high. Add the vinegar, cornstarch, and vanilla, and beat for another 30 seconds until fully incorporated.
  5. Spoon the meringue onto the parchment circle, shaping it into a nest with a slight well in the center and raised edges about 1 1/2 inches high. Smooth the sides with a spatula.
  6. Bake on the middle rack for 1 hour 30 minutes without opening the oven. Turn the oven off and leave the pavlova inside to cool completely, at least 1 hour, so the center stays marshmallow-soft.
  7. Whisk the smetana with the powdered sugar and vanilla until just thickened and spreadable; do not overwhip. Transfer the cooled pavlova to a serving plate.
  8. Pile the sweetened smetana into the center well, scatter the toasted walnuts and stewed prunes over the top, drizzle with honey, and garnish with fresh berries if using. Slice with a sharp serrated knife and serve immediately.

  • Make sure the mixing bowl and whisk are completely free of grease or yolk; even a trace of fat will prevent stiff peaks.
  • Add the sugar a tablespoon at a time so it fully dissolves; rub a bit between your fingers to check for graininess before baking.
  • A low, slow bake is essential; resist opening the oven or the meringue may crack or collapse.
  • Assemble the pavlova just before serving so the smetana and fruit do not soften the crisp shell.
