Ingredients

For the fish

  • 4 whole bluefish or horse mackerel (about 250 g / 9 oz each), gutted and scaled
  • 1 cup (125 g) all-purpose flour
  • 1 1/2 teaspoons fine sea salt
  • 1 teaspoon freshly ground black pepper
  • 1/2 teaspoon sweet paprika
  • About 2 cups (480 ml) sunflower or light olive oil, for frying
  • Lemon wedges, to serve

For the sumac rocket salad

  • 4 cups (80 g) rocket leaves (arugula), washed and dried
  • 1 small red onion, very thinly sliced
  • 2 teaspoons ground sumac
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1/4 teaspoon fine sea salt

To serve

  • Crusty Turkish bread or pide
  • Extra lemon wedges

Directions

  1. Pat the fish completely dry with paper towels, inside and out. Season the cavities lightly with a pinch of salt and let rest at room temperature for 10 minutes while you prepare the salad and heat the oil.
  2. Make the salad: combine the rocket and sliced onion in a wide bowl. Whisk the sumac, olive oil, lemon juice, and salt in a small bowl until blended, then drizzle over the greens and toss gently just before serving.
  3. In a wide, heavy skillet, pour in oil to a depth of about 1 cm (1/2 inch) and heat over medium-high until it reaches 175 °C (350 °F) — a small pinch of flour should sizzle immediately on contact.
  4. Mix the flour, salt, pepper, and paprika in a shallow bowl. Dredge each fish thoroughly in the seasoned flour, pressing gently so it adheres, then shake off the excess and place on a tray.
  5. Carefully lay 2 fish in the hot oil (do not crowd the pan) and fry for about 4 to 5 minutes per side, turning once with a slotted spatula, until deeply golden and crisp and the flesh near the spine flakes easily. Transfer to a paper-towel-lined tray and keep warm; repeat with the remaining fish.
  6. Re-toss the salad just before plating. Arrange each whole fried fish on a warm plate alongside a generous mound of the sumac rocket, scatter any fried onion bits from the paper towel over the fish, and serve at once with lemon wedges and crusty bread.
  7. Encourage diners to eat the fish from the tail up, peeling back the crisp skin — the traditional way to enjoy balık tava by the Bosphorus.

Cook’s Notes

  • Use the freshest whole fish you can find — small bluefish (lüfer), horse mackerel (istavrit), or even sardines all work beautifully and cook in roughly the same time.
  • Maintain the oil temperature; if it drops too low the coating will absorb oil and turn greasy, while too hot will scorch the flour before the fish cooks through.
  • Fry in batches so the oil stays hot and the fish stay crisp — never overcrowd the pan.
  • For the most authentic flavor, source true Turkish pul biber (Aleppo-style pepper) and add a pinch to the flour mixture alongside the paprika.
