Ingredients

For the rose milk syrup

  • 1.5 L whole milk
  • 300 g granulated sugar
  • 2 tbsp cornstarch
  • 3 tbsp rose water
  • 1 tsp vanilla extract

For the layers

  • 12 thin güllaç sheets (or very thin phyllo)
  • 1 cup shelled pistachios, roughly chopped
  • 1/2 cup walnuts, finely chopped
  • 1/2 cup pomegranate seeds

For the garnish

  • 2 tbsp chopped pistachios
  • 2 tbsp pomegranate seeds
  • 1 tsp dried rose petals (optional)
  • 1/4 tsp ground cinnamon

Directions

  1. In a large saucepan, whisk together the milk, sugar, and cornstarch until completely smooth. Heat over medium, stirring constantly, until the sugar dissolves and the mixture just begins to thicken, about 8 to 10 minutes; do not allow it to boil.
  2. Remove the pan from heat and stir in the rose water and vanilla extract. Let cool for 5 minutes so the milk is warm but not hot, which would make the sheets fall apart.
  3. Pour a thin layer of the rose milk into a 9×13-inch (23×33 cm) rectangular baking dish to coat the bottom. Lay one pastry sheet in the dish, gently folding it to fit, and spoon about 1/3 cup of milk evenly over the surface until fully saturated.
  4. Repeat with 6 more sheets, brushing each with milk as you go and rotating sheets so they cover the dish evenly.
  5. Sprinkle half of the pistachios, walnuts, and pomegranate seeds evenly over the top of the layered sheets.
  6. Layer the remaining 6 sheets, brushing each with milk as before. Pour any remaining milk over the top and press gently with the back of a spoon to release air bubbles and ensure even soaking.
  7. Cover the dish with plastic wrap and refrigerate for at least 4 hours, or preferably overnight, until the pastry is completely cool and the sheets have softened into a custard-like texture.
  8. Cut into diamond or square pieces, then garnish with the remaining chopped pistachios, pomegranate seeds, dried rose petals, and a light dusting of cinnamon. Serve cold.

Cook’s Notes

  • Whole milk is essential here; lower-fat milk will leave the dessert thin and watery.
  • Güllaç sheets are sold at Turkish and Middle Eastern markets; if substituting phyllo, use 2 layers per sheet for sturdiness.
  • Always let the milk cool slightly before pouring; hot liquid will dissolve the delicate sheets into mush.
  • Make it the night before for the cleanest cuts and the most developed rose flavor.
  • Adjust rose water gradually; 3 tablespoons is gently floral, but you can add a fourth for a more pronounced aroma.
