Nopalitos

Nopalitos are the tender young pads of the prickly pear cactus, harvested within roughly 100 days of growth and a foundational vegetable in Mexican cuisine. They possess a mildly tart, green-bean-like flavor and release a characteristic mucilage when cooked.

History & Origins

The Opuntia cactus was one of the first plants domesticated in Mesoamerica, with archaeological evidence of cultivation by the Aztecs and earlier cultures dating back at least 8,000 years. Both the fruit (tunas) and the young pads (nopalitos) were dietary staples of central Mexico before the Spanish conquest, and the plant later spread across the Mediterranean basin and other arid regions through 16th-century colonial trade.
