Radicchio is a leaf chicory of the Asteraceae family, cultivated for its tight heads of wine-red leaves laced with white midribs, prized in Italian cookery for its pleasantly bitter, peppery flavor.
History & Origins
Wild chicory has been consumed in the Mediterranean since antiquity, but the cultivated heading radicchio of the Veneto emerged in the sixteenth century and was systematized in the late 1800s when farmers around Treviso discovered that overwintering plants in darkened sheds (imbianchimento) produced the pale, crisp hearts seen today. The crop received protected status under Italian law, with Radicchio Rosso di Treviso and Radicchio Variegato di Castelfranco now recognized as PGI products tied to specific municipalities in Veneto.
