Inspired by Fiji's large Indo-Fijian community, this curry blends warm Indian spices with the tropical coconut cream that Fijian home cooks favor. The result is a rich, golden stew that's milder than a Madras but deeper than a weeknight korma. Serve it with steamed rice or fresh roti for an authentic island meal.

Ingredients

For the chicken and marinade

  • 1.5 lb bone-in chicken thighs, skin removed, cut into 2-inch pieces
  • 1 tbsp fresh lemon juice
  • 1/2 tsp ground turmeric
  • 1/2 tsp fine sea salt

For the spice base

  • 2 tbsp vegetable oil
  • 1 large yellow onion, finely chopped
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, finely grated
  • 2 green chilies, slit lengthwise
  • 1 medium ripe tomato, finely chopped

For the spice blend

  • 2 tbsp mild Indian-style curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp garam masala
  • 1/2 tsp Kashmiri chili powder (optional for color)

For finishing the curry

  • 1 cup thick coconut cream
  • 1/2 cup water
  • 3/4 tsp fine sea salt, or to taste
  • 1/4 cup fresh cilantro leaves, roughly chopped
  • 1 tbsp fresh lime juice

Directions

  1. Combine the chicken pieces with lemon juice, turmeric, and 1/2 tsp salt in a bowl; set aside to marinate for 15 minutes while you prepare the other ingredients.
  2. Heat the oil in a heavy pot or deep skillet over medium heat. Add the onion and cook, stirring often, for 6 to 8 minutes until deeply golden and soft.
  3. Stir in the garlic, ginger, and green chilies and sauté for 60 seconds until very fragrant, taking care not to brown the garlic.
  4. Add the chopped tomato and cook for 3 to 4 minutes, pressing it against the pan, until it breaks down and the oil begins to separate at the edges.
  5. Sprinkle in the curry powder, cumin, coriander, garam masala, and chili powder. Stir constantly for 30 seconds to toast the spices and bloom their flavor.
  6. Add the marinated chicken and toss to coat in the spice mixture. Brown the pieces lightly on all sides for about 5 minutes.
  7. Pour in the coconut cream and water, stir well, and bring to a gentle simmer. Cover, reduce the heat to low, and cook for 20 minutes until the chicken is fork-tender.
  8. Uncover and simmer for 5 more minutes to thicken the sauce to a rich, spoonable consistency. Stir in the salt, lime juice, and most of the cilantro.
  9. Let the curry rest off the heat for 5 minutes so the sauce settles, then garnish with the remaining cilantro and serve hot with steamed basmati rice or fresh roti.

Cook’s Notes

  • Bone-in chicken thighs stay juicier than breasts; if using breasts, reduce the covered simmer time to 12 minutes so they don't dry out.
  • For a deeper mahogany color, swap the Kashmiri chili powder for 1 tsp smoked paprika alongside the curry powder.
  • Toast the dry spices in the oil for at least 30 seconds—this single step transforms the curry from flat to aromatic.
  • A 5-minute rest off the heat lets the coconut cream settle into a velvety sauce instead of splitting.
  • Serve with cassava, taro, or dhal (split pea soup) on the side for a traditional Fijian plate.
