Ingredients

For the Sweetbreads

  • 1.5 lb veal sweetbreads, soaked and trimmed
  • 4 cups cold water, plus more for blanching
  • 2 tbsp lemon juice
  • 2 tsp kosher salt, plus more to season
  • 1 bay leaf
  • 1/2 cup all-purpose flour for dredging
  • 3 tbsp unsalted butter
  • 2 tbsp olive oil

For the Madeira Cream Sauce

  • 1 cup Madeira wine (Sercial or Verdelho)
  • 1 cup veal or chicken demi-glace
  • 1 cup heavy cream
  • 8 oz cremini mushrooms, thinly sliced
  • 2 shallots, finely minced
  • 2 tbsp unsalted butter
  • 1 tbsp fresh thyme leaves
  • 1/2 tsp freshly ground white pepper

For Garnish

  • 2 tbsp fresh flat-leaf parsley, finely chopped
  • 1 tbsp fresh chives, snipped
  • 1 lemon, cut into wedges

Directions

  1. Soak the sweetbreads in a bowl of cold salted water with the lemon juice for 2 to 4 hours in the refrigerator, changing the water once, to draw out any blood.
  2. Bring a pot of water to a gentle simmer with the bay leaf and 1 teaspoon of salt; blanch the sweetbreads for 5 minutes, then drain and transfer to an ice bath.
  3. Peel away any membranes or gristle while still warm, then place the sweetbreads between two sheet pans weighted with a heavy pot; refrigerate for at least 1 hour to firm up.
  4. Slice the pressed sweetbreads into 3/4-inch medallions, pat dry, season lightly with salt, and dredge each piece in flour, shaking off excess.
  5. Heat the butter and olive oil in a large skillet over medium-high until foaming; sear the sweetbreads for about 2 to 3 minutes per side until deeply golden. Transfer to a warm plate.
  6. In the same skillet, melt the remaining 2 tablespoons of butter and sauté the shallots for 1 minute; add the mushrooms and cook until lightly browned, about 4 minutes.
  7. Pour in the Madeira and simmer until reduced by half, scraping up the browned bits, then stir in the demi-glace, cream, and thyme. Simmer until the sauce coats the back of a spoon, 4 to 5 minutes.
  8. Return the sweetbreads and any collected juices to the skillet, spoon the sauce over them, and warm through for 1 to 2 minutes without boiling.
  9. Season the sauce with white pepper and salt, plate the sweetbreads, spoon the Madeira cream and mushrooms around them, and finish with parsley, chives, and a lemon wedge.

  • Always soak sweetbreads thoroughly and remove all silverskin for the cleanest flavor and tenderest bite.
  • Pressing the sweetbreads between weighted pans is essential so they hold their medallion shape during searing.

  • Avoid boiling once the cream is added – a gentle simmer prevents the sauce from breaking.
