Ingredients

Directions
- Make the syrup first: combine sugar, water, and lemon peel in a small saucepan. Bring to a gentle boil, stirring until the sugar dissolves, then simmer 8 to 10 minutes until slightly thickened. Stir in the lemon juice and set aside to cool completely.
- Prepare the kadayif: place the shredded phyllo dough in a large bowl and gently pull apart the strands with your fingers to loosen any clumps. Drizzle the melted butter over the strands and toss carefully so every strand is lightly coated without breaking them.
- Shape the nests: take about 1/3 cup of the buttered kadayif and press it into a flat patty roughly 4 inches (10 cm) wide. Use your thumb to press a deep well into the center, creating a nest shape with raised sides. Repeat with the remaining dough to make 6 nests.
- Fill each nest with about 6 to 7 whole pistachios, then top with a thin layer of extra kadayif strands to lightly enclose the filling.
- Heat the oil in a deep skillet to 350°F (175°C). Carefully lower 2 or 3 nests at a time into the hot oil and fry for 3 to 4 minutes per side, turning once, until deep golden brown and crisp all over.
- Drain the fried nests briefly on paper towels for about 30 seconds, then immediately submerge them in the cold sugar syrup for 2 to 3 minutes, turning once so they absorb evenly.
- Lift the soaked nests onto a serving platter; they should glisten and feel saturated but still hold their shape.
- Spoon a generous dollop of kaymak or clotted cream onto each nest, sprinkle with extra pistachios, and serve warm or at room temperature.
