Ingredients

For the palm fruit base

  • 500 g fresh palm fruit concentrate (banga paste)
  • 1.5 liters cold water
  • 1 medium onion, roughly chopped
  • 1 tablespoon ground crayfish

For the proteins

  • 600 g goat meat on the bone, cut into chunks
  • 250 g smoked catfish, gutted and cut into pieces
  • 120 g dried stockfish (panla), pre-soaked in warm water for 1 hour
  • 150 g cow skin (kpomo), cut into bite-sized pieces

For the Delta spice blend

  • 1 tablespoon uziza seeds, finely ground
  • 1 teaspoon ehuru (African nutmeg), ground
  • 1 teaspoon uda (negro pepper), crushed
  • 1 tablespoon ogiri Igbo (fermented seed condiment)
  • 1 teaspoon ground Cameroon pepper
  • 1 1/2 teaspoons fine sea salt, plus more to taste

For the greens and finishing

  • 2 cups tightly packed scent leaves (efirin), washed and shredded
  • 1 cup bitter leaf, washed and squeezed
  • 1 small onion, sliced
  • 1 cooking spoon red palm oil, optional for richness

Directions

  1. Season the goat meat with half of the chopped onion and a pinch of salt, then place in a pot, cover with water, and boil for 25 to 30 minutes until tender. Reserve the broth.
  2. In a heavy pot, combine the palm fruit concentrate with 1 liter of water and bring to a vigorous boil for 15 minutes, mashing any pulp against the side of the pot to release the oils.
  3. Strain the palm fruit liquid through a fine sieve into a clean pot, discarding the fiber. Return the liquid to the heat and add the reserved goat meat, stockfish, and cow skin with their broth.
  4. Add the smoked catfish, ground crayfish, uziza seeds, ehuru, uda, ogiri, and Cameroon pepper. Stir gently to combine and allow to simmer uncovered for 20 minutes, skimming any foam.
  5. Taste the broth and adjust the salt. Continue to simmer until the soup has reduced slightly and a clear layer of orange palm oil floats on top, about 10 more minutes.
  6. Stir in the sliced onion and bitter leaf, then simmer for 4 minutes so the greens soften but retain their bite.
  7. Remove from the heat and fold in the shredded scent leaves along with the optional spoon of red palm oil. Cover the pot and let the residual heat release the leaf aromatics for 3 minutes.
  8. Serve immediately in deep bowls alongside Delta-style white starch, pounded yam, or eba.

Cook’s Notes

  • Always use fresh palm fruit concentrate for the most authentic Delta flavor; tinned banga paste works but yields a milder taste.
  • Pre-soak the stockfish overnight in cold water with a pinch of salt for an even softer texture and faster cooking.
  • The soup is properly finished when a clear ring of palm oil floats on the surface and the broth turns deep orange.
  • Add scent leaves only at the end of cooking to preserve their volatile oils and bright herbal aroma.
  • For a richer body, mash a small boiled yam or add 1 tablespoon of ground egusi during the last 10 minutes of simmering.
