Directions
- Heat the oil in a large heavy pot over medium heat. Add the onion and cook for 4-5 minutes until translucent and softened.
- Stir in the garlic, ginger, and chopped chili and cook for another minute until fragrant, taking care not to burn the garlic.
- Add the bell peppers, carrots, and cabbage. Cook for 6-8 minutes, stirring occasionally, until the vegetables begin to soften but still hold their shape.
- Sprinkle in the curry powder, smoked paprika, and cumin. Stir constantly for 60 seconds to toast the spices and coat the vegetables evenly.
- Pour in the canned tomatoes with their juice and add the bay leaves. Bring to a gentle simmer and cook for 8-10 minutes until thickened and the vegetables are tender.
