Ingredients

  • 2 cups long-grain rice
  • 400g fresh tomatoes, blended
  • 3 red bell peppers, blended
  • 2 onions (1 sliced, 1 chopped)
  • 3 tbsp tomato paste
  • 2 cups chicken or beef stock
  • 1 tsp curry powder
  • 1 tsp thyme
  • 2 bay leaves
  • Salt to taste
  • Vegetable oil

Instructions

  1. Wash rice thoroughly and set aside.
  2. Heat oil in a large pot. Fry one sliced onion until golden.
  3. Add tomato paste and fry for 3-4 minutes until darkened.
  4. Add blended tomato and pepper mixture. Cook on medium for 20 minutes, stirring occasionally.
  5. Add curry, thyme, bay leaves, and stock. Bring to a boil.
  6. Add washed rice, stir well. Season with salt.
  7. Cover tightly and cook on low heat for 30-35 minutes until rice is tender and fully cooked.
  8. Fluff with a fork and serve with fried plantains and salad.

Chef Notes

For extra flavor, add smoked turkey or chicken. The secret is in the tomato base — don’t rush this step!
