Homemade Sushi Rolls

Ingredients

  • 2 cups sushi rice
  • 2.5 cups water
  • 1/4 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
  • 4 nori seaweed sheets
  • 200g fresh salmon or tuna
  • 1 cucumber, julienned
  • 1 avocado, sliced
  • Soy sauce, wasabi, pickled ginger for serving

Instructions

  1. Wash rice until water runs clear. Cook with water in rice cooker.
  2. Mix rice vinegar, sugar, and salt. Warm slightly to dissolve.
  3. Fold vinegar mixture into hot rice. Fan while folding to cool.
  4. Place nori sheet shiny side down on bamboo mat.
  5. Spread thin layer of rice on nori, leaving 1 inch at top.
  6. Add fish, cucumber, and avocado in a line across center.
  7. Roll tightly using bamboo mat. Wet the top edge to seal.
  8. Slice into 6-8 pieces with wet knife. Serve with soy sauce.
