Ingredients
For the corn-plantain base
- 2 cups fresh corn kernels (from about 3-4 ears)
- 2 large green (unripe) plantains, peeled and chopped into 1-inch chunks
- 4 cups water
- 1 teaspoon fine sea salt
For the flavor base
- 2 tablespoons palm oil
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1 inch fresh ginger, grated
- 1 Scotch bonnet pepper, seeded and finely chopped (optional)
- 1 cup shredded pumpkin leaves or baby spinach
For serving
- 200 g grilled or smoked fish, flaked (optional)
- 2 tablespoons roasted peanuts, roughly crushed
- 1 ripe avocado, sliced
- Lime wedges, for squeezing
Directions
- Prepare the corn by standing each cob upright and slicing the kernels off with a sharp knife. Peel the green plantains and chop them into roughly 1-inch chunks.
- Bring 4 cups of water to a rolling boil in a large heavy pot. Add the corn kernels, plantain chunks, and 1 teaspoon salt. Reduce to medium heat and simmer uncovered for 20 minutes, until the plantains are very tender.
- Using a wooden spoon or sturdy potato masher, mash about half of the mixture against the side of the pot to create a thick, slightly sticky porridge while leaving the rest of the kernels and plantains in soft chunks.
- Meanwhile, heat the palm oil in a small skillet over medium heat. Sauté the onion for about 4 minutes until soft and translucent, then add the garlic, ginger, and Scotch bonnet if using. Cook another 2 minutes until fragrant.
- Stir the sautéed aromatic mixture into the corn-plantain porridge along with the shredded pumpkin leaves. Simmer for 5 more minutes, stirring frequently, until the greens wilt and everything melds into a cohesive porridge. Taste and adjust salt.
- Remove the pot from the heat and let it rest for 2 minutes so the porridge sets slightly.
- Ladle into bowls and top each serving with flaked grilled fish, crushed roasted peanuts, sliced avocado, and a generous squeeze of fresh lime. Serve hot.
Cook’s Notes
- Use very green, unripe plantains — yellowing ones will make the dish sweet and will lose the traditional savory texture.
- Fresh corn gives the brightest flavor; thawed frozen kernels work fine in a pinch.
- Palm oil provides authentic flavor and a deep orange color, but you can substitute refined coconut oil if needed.
- For an even heartier pot, stir flaked smoked fish directly into the porridge instead of using it as a topping.
- Leftovers thicken overnight; loosen with a splash of water when reheating on the stove.
