Directions
- Gently rinse the escamoles in a fine-mesh sieve under cold running water for about 30 seconds, then drain well and pat dry with paper towels; handle them carefully because they are very delicate.
- Heat the butter in a large skillet over medium heat until melted and just beginning to foam, about 1 minute.
- Add the diced onion and cook for 3 to 4 minutes, stirring occasionally, until softened and translucent.
- Stir in the minced garlic and jalapeño and cook for 30 seconds until fragrant, being careful not to let them brown.
- Add the escamoles to the skillet and gently fold them into the aromatics with a rubber spatula for 2 to 3 minutes, just until heated through; they should remain tender and slightly creamy, never rubbery.
- Sprinkle in the chopped epazote and fresh oregano, season with salt, give everything one final gentle toss, and remove from heat immediately.
