- 1 1/2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground cardamom
- 1/4 teaspoon fine salt
- 2 tablespoons whole milk
For the lemon glaze
- 1 cup (120 g) powdered sugar
- 2 tablespoons fresh lemon juice
- 1 teaspoon water, as needed
Directions
- Line a baking sheet with parchment and set aside. In a small saucepan over low heat, combine the honey, sugar, and butter, stirring until the butter melts and the sugar dissolves; remove from heat and cool for 5 minutes.
- In a medium bowl, whisk together the flour, baking soda, ginger, cinnamon, cloves, cardamom, and salt until evenly blended.
- Beat the eggs into the cooled honey mixture one at a time, then stir in the milk until smooth.
- Add the dry ingredients to the wet mixture and stir with a wooden spoon until a soft, slightly sticky dough forms. Cover and refrigerate for 30 minutes to firm up.
- Lightly flour a work surface and roll the dough out to about 1/2-inch (12 mm) thickness. Cut into 3-inch squares or rectangles and transfer to the prepared baking sheet, spacing them about 1 inch apart.
- Bake in a preheated 350°F (175°C) oven for 12-15 minutes, until the tops are set, lightly puffed, and just turning golden at the edges; the cookies should remain soft in the center.
- While the cookies cool on the pan for 5 minutes, whisk the powdered sugar with the lemon juice in a small bowl, adding water a few drops at a time until the glaze is smooth and pourable.
