Ingredients
For the chicken
- 2 lb (900 g) boneless skinless chicken thighs, cut into 1.5-inch pieces
- 1 large yellow onion, cut into thick rings for serving
- 1 lemon, cut into wedges
- 2 tablespoons chopped fresh dill
For the classic shashlyk marinade
- 1 large yellow onion, finely grated (about 1/2 cup pulp + juice)
- 3 tablespoons white wine vinegar or apple cider vinegar
- 3 tablespoons sunflower or canola oil
- 4 cloves garlic, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 2 bay leaves, crushed
- 1/2 teaspoon dried thyme
For skewering and grilling
- 8 metal or pre-soaked wooden skewers
- 1 red onion, cut into 1.5-inch chunks (optional)
- 2 tablespoons sunflower oil for brushing
Directions
- In a large non-reactive bowl, combine the grated onion and its juice, vinegar, oil, garlic, salt, pepper, crushed bay leaves, and thyme; whisk until the salt dissolves and the mixture looks milky.
- Add the chicken pieces to the bowl and toss thoroughly so every piece is coated. Cover and refrigerate at least 2 hours, ideally 8 to 12 hours, turning once or twice so the marinade penetrates evenly.
- About 30 minutes before cooking, remove the chicken from the fridge to take the chill off. If using wooden skewers, soak them in water for at least 20 minutes.
- Thread the chicken onto skewers, folding each piece accordion-style so it lays flat against the metal; alternate with red onion chunks if using. Leave a little space between pieces for even cooking.
- Prepare a hot grill with a clean grate (or a grill pan over high heat). Brush the skewers lightly with sunflower oil and place directly over the hottest part of the fire.
- Grill 3 to 4 minutes per side, turning with tongs, until the chicken is deeply browned, lightly charred at the edges, and registers 165°F (74°C) internally, about 12 to 14 minutes total.
- Transfer the skewers to a platter, cover loosely with foil, and let rest 5 minutes so the juices redistribute. Discard the bay leaves before serving.
- Serve hot with the raw onion rings, lemon wedges, and a generous sprinkle of fresh dill. Offer plain bread or new potatoes on the side.

- Marinate the chicken overnight for the most authentic shashlyk flavor; the grated onion enzymes tenderize the meat and the vinegar adds tang without making it tough if not over-marinated (do not exceed 24 hours).
- Always discard any leftover marinade that has touched raw chicken; do not baste with it during cooking unless you first boil it for 1 minute.
- Boneless thighs stay juicier than breasts over high heat, but if using breasts, cut them slightly larger and reduce grill time to about 2 to 3 minutes per side to prevent drying out.
