Ingredients
For the vegetables
- 1 large celery root (about 1.25 kg), peeled and cut into 2 cm cubes

- 1 cup fresh or frozen green peas

For braising and seasoning
- 1/2 cup extra-virgin olive oil
- 1 1/2 cups warm water
- 1 teaspoon granulated sugar
- 1 1/2 teaspoons fine sea salt
- 1/4 teaspoon freshly ground black pepper
- 1/4 cup fresh flat-leaf parsley, finely chopped
Directions
- Fill a large bowl with cold water and stir in 2 tablespoons of the lemon juice. Add the cubed celery root immediately after cutting to prevent discoloration, and let it soak while you prepare the other vegetables.
- Heat the olive oil in a wide, heavy-bottomed pot over medium heat. Add the chopped onion and cook for 3 to 4 minutes until soft and translucent, then stir in the garlic and cook for 30 seconds until fragrant.
- Drain the celery root and add it to the pot along with the carrots, potatoes, sugar, salt, and pepper. Pour in the warm water and remaining lemon juice, and gently stir to combine.
- Bring the mixture to a gentle boil, then reduce the heat to low, cover the pot, and simmer for 25 to 30 minutes, or until the celery root and potatoes are fork-tender but still hold their shape. Stir in the peas during the last 5 minutes of cooking.
- Remove the pot from the heat and let it cool to room temperature without removing the lid, allowing the vegetables to absorb the lemony olive oil. Just before serving, gently transfer to a serving dish and sprinkle generously with fresh parsley.
- Serve cool or at room temperature with extra lemon wedges on the side, accompanied by crusty bread or as part of a mezze spread.
