Samoan sua niu, fresh coconut water scooped straight from young green coconuts, is a daily island tradition enjoyed as a natural refresher. This Samoan-style version brightens the delicate nut water with tangy lime, floral passionfruit pulp, a whisper of ginger, and a touch of honey. Served ice-cold, it captures the easy, sun-soaked spirit of the Pacific in a single glass.

Directions

  1. Step 1If using whole young coconuts, carefully trim the soft top with a heavy cleaver and pour the clear coconut water through a fine mesh strainer into a large pitcher; you should have about 4 cups.
  2. Step 2Add the freshly squeezed lime juice, the passionfruit pulp and seeds, grated ginger, honey, and sea salt to the pitcher, stirring gently until the honey is fully dissolved.
  3. Taste and adjust with more lime juice or honey depending on the natural sweetness of your coconut water; Samoan-style it should taste bright, lightly sweet, and very clean.
  4. Step 4Cover and refrigerate the mixture for at least 30 minutes so the ginger and passionfruit can infuse the coconut water without diluting it with melted ice.
  5. Step 5Fill four tall glasses to the brim with ice cubes, then pour the chilled coconut water mixture evenly over the ice.
  6. Step 6Top each glass with a small spoonful of extra passionfruit pulp if desired, then garnish with a fresh mint sprig and a lime wheel resting on the rim.
  7. Step 7Serve immediately while still icy cold, stirring once with a long spoon so the passionfruit seeds distribute through the glass.
  8. Step 8Drink with a straw or sip straight from the glass, savoring the gentle sweetness and tropical aroma with every mouthful.

Cook’s Notes

  • For the most authentic flavor, source young green coconuts (niu) from a tropical market and crack them open yourself rather than using bottled water.
  • In Samoa this is often served in the emptied coconut shell itself; rinse the shell well and use it as a rustic cup for an island-style presentation.
  • Add a splash of chilled sparkling water just before serving if you prefer a fizzy refresher on a hot afternoon.
  • Best enjoyed the same day it is made, as fresh coconut water quickly loses its delicate sweetness once exposed to air.
  • For a heartier version, blend in 1 cup of fresh pineapple chunks and a small frozen banana to make a creamy tropical smoothie.
