Ingredients

For the sugar syrup

  • 2 cups (400 g) granulated sugar
  • 1 1/4 cups (300 ml) water
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon honey (optional, prevents crystallization)

For the pistachio filling

  • 2 1/2 cups (300 g) raw unsalted pistachios, preferably Gaziantep, finely chopped
  • 1 tablespoon granulated sugar

For assembly

  • 1 package (about 16 oz / 450 g) fresh phyllo dough, thawed if frozen
  • 1 cup (225 g) clarified butter or unsalted butter, melted and slightly cooled

Directions

  1. Make the syrup first: combine sugar, water, lemon juice, and honey in a small saucepan. Bring to a gentle boil, stirring until the sugar dissolves, then simmer 8 minutes. Remove from heat and let cool completely; the syrup must be cold when poured over the hot baklava.
  2. Position a rack in the lower third of the oven and preheat to 350°F (175°C). Stir the chopped pistachios together with 1 tablespoon sugar and set aside. Keep the stack of phyllo covered at all times with a slightly damp, clean kitchen towel to prevent drying.
  3. Brush a 9×13-inch (23×33 cm) metal baking pan with a thin layer of melted butter. Place 1 sheet of phyllo in the pan and brush lightly but evenly with butter; repeat for 8 more sheets so you have 9 buttered layers on the bottom.
  4. Sprinkle the pistachio mixture in an even layer over the stacked phyllo, pressing gently so it reaches the edges. Top with 8 to 10 more sheets of phyllo, brushing each with butter as you go, finishing with a buttered top layer.
  5. Using a very sharp knife, score the baklava through all layers into 24 diamonds or triangles (cut about halfway down first, then finish cutting after baking if you prefer cleaner edges). Drizzle any remaining butter over the top.
  6. Bake on the lower rack for 40 to 50 minutes, until the top is deeply golden and crisp. If the top browns too quickly, move to the middle rack for the last 10 minutes.
  7. Immediately pour the cold syrup slowly and evenly over the hot baklava straight from the oven; you should hear a gentle sizzle. Tap the pan gently so the syrup reaches the bottom layers.
  8. Let the baklava rest uncovered at room temperature for at least 6 hours, ideally overnight, so the syrup fully absorbs and the layers set. Serve at room temperature, optionally garnished with a few extra whole pistachios.

Cook’s Notes

  • Authentic Gaziantep (Antep) pistachios are naturally greener and more aromatic; blanched American pistachios also work but will give a paler color.
  • Brush every single layer with butter; this is what creates the crisp, flaky shatter rather than chewy layers.
  • Always pour cold syrup over hot baklava (not the reverse) to keep the pastry crisp and prevent sogginess.
  • For cleaner diamond cuts, score halfway before baking and finish cutting the full depth right after removing from the oven, while still hot.
  • Store covered at room temperature for up to 1 week; do not refrigerate, as condensation will soften the phyllo.
